Egg White Muffins – Quick, Easy, Healthy and Delicious

Breakfast is the most important meal of the day. What you fuel your body with first thing in the morning can be critical on your journey to a healthier lifestyle. I love making these egg white muffins for two main reasons– they are quick and easy, and they taste delicious! This is a great meal prep option because they can be made in advance and they still taste just as great so you can just grab and go. Feel free to add your own special touch by making each one different (if you choose). You can do this by just combining a few of your favorite veggies and protein all into one muffin pan. These are even a great meal prep option because they reheat very well.

Ingredients:

  • 16 oz egg whites
  • non-stick cooking spray
  • 16 oz of turkey sausage
  • ½ cup red bell pepper (diced)
  • ½ cup green bell pepper (diced)
  • 1 cup spinach
  • ½ cup tomatoes
  • ½ cup mozzarella cheese
  • seasoned pepper
  • salt
  • pepper flakes

Directions:

Preheat oven to 375 degrees.

Spray the muffin tin with non-stick cooking spray and begin adding veggies of your choice into each individual cup. With the ingredients listed above, I added in the spinach, peppers, tomatoes. Next, add in your protein (turkey sausage for me) and top with cheese. Pour in your egg whites, filling each cup about ¾ full. Season with a sprinkle of salt, red pepper flakes, and seasoned pepper.

Place in the oven for 10-15 minutes, or until the egg mixture has cooked throughout. Remove from oven and cool for 2 minutes (they should remove from the pan easily). Serve immediately or pop in the refrigerator for later. To reheat, microwave for 45-60 seconds and enjoy!
